A Peach & Parma Ham Bruschetta Topping

Savoury, sweet and scrumptious, this bruschetta bread is great for a luxurious lunch. Hunks of sourdough are toasted and topped with a thick layer of my The Laughing Cow Extra Light Cheese Spread. And if that isn’t tasty enough already, there’s also cranberry sauce, sliced fresh peach and parma ham to be added too.  Maybe not your traditional bruschetta toppings but I bet you can’t eat it without smiling!

Makes 2


  • 2 slices of sourdough (or ciabatta bread)
  • 4 triangles of The Laughing Cow Extra Light
  • 4 tsp cranberry sauce
  • 1 peach (or nectarine), pitted and sliced
  • 4 slices Parma ham
  • Freshly ground black pepper
  • Basil leaves, to garnish


  1. Chargrill or toast the slices of sourdough (or ciabatta).
  2. Spread each slice with 2 triangles of The Laughing Cow Extra Light and add 2 teaspoons of cranberry sauce to each one.
  3. Arrange the slices of peach (or nectarine) and Parma ham on top and season with a little freshly ground black pepper.
  4. Serve, scattered with a few basil leaves for the perfect treat for your taste buds!
  5. Tip: Substitute the cranberry sauce for chutney, if you prefer.
