Wimbledon Ice Lollies

It’s summer time, the sun comes out, days are hot… and it’s strawberries season! To celebrate why not try our cool & refreshing Wimbledon Ice Lollies recipe with The Laughing Cow Light cheese, sweet strawberries and crunchy meringue.  For those of you who are interested in such things, despite sounding wonderfully indulgent (well it does to me anyway!), it’s only 95 calories per portion.
It’s a great little treat to give some freshness to your picnics, or to serve as a dessert at a dinner or BBQ (not to mention when you are watching Tennis).
Fancy a bit of variety? Why not experiment with different fruits?  Or play around with the choice of mould?  No one says you *have* to use a cup of the same size I do…   bigger cup = bigger serving.  Different shaped container… different shaped dessert.  Have fun with it!*

Preparation time: 10 minutes
Refrigerate time: 1 hour

Makes 12


  • 1 cup crushed meringue
  • 1 wheel of The Laughing Cow Light, triangles separated
  • 300g fresh strawberries
  • 30g sugar
  • 300ml double cream


  1. Dice your strawberries into little pieces.
  2. Add to a bowl with the sugar and stir to combine and refrigerate for a couple of hours.
  3. Whip the cream until a bit stiff. Add to laughing cow and whisk to combine. Fold crushed meringue and macerated strawberries through the mix.
  4. Add to small plastic cups and pop a cocktail stick in the middle of each- using guides to stop them leaning if necessary.
  5. Freeze until set.
  6. Enjoy – and let us know how it goes down with your guests!
