Cheese and Radish Snack

How should one eat radishes?  Is there really a right answer?  Probably not (though I’d bet there are some wrong ones…).  Either way, I’ve come across at least one answer which you can guarantee is definitely right: this radish snack recipe featuring the taste bud-tickling tingle of radishes topped by my Light cheese spread and tiny cornichons. Each cheese triangle is 25 calories so you can sneak a few and not feel guilty! A quick snack which is pretty and punchy – your hunger won’t know what’s hit it.

Preparation time: 8 minutes

Makes 10

Ingredients

  • 5 large radishes, halved
  • 4 triangles of The Laughing Cow Light
  • 4 cornichons quartered length ways
  • A few sprigs of dill
  • Freshly ground black pepper

Method

  1. Take the halved radishes and remove a sliver from the bottom of curved side so the halves will sit comfortably facing up.
  2. Spread The Laughing Cow Light on each radish half.
  3. Place a cornichon quarter on top along with a sprig of dill.
  4. Season with black pepper and prepare for that mouthwatering crunch.
