Cheese and Cauliflower Bites

Whether it’s getting close to lunchtime, or the afternoon is dragging on, I reach for this really easy recipe for Cauliflower bites . The smoky flavour of griddled cauliflorets and pancetta is already tasty enough… but topped with the delicious richness of our light cheese spread with blue cheese… it’s even better!
Also works well as a sophisticated appetizers for a dinner party, or a lighter option for a buffet (if you can bear to share).

Preparation time: 8 minutes
Cooking time: 10 minutes

Makes 10-12

Ingredients

  • 1/2 a small head of cauliflower, separated into florets
  • 5 rashers of pancetta (or enjoy without for a delicious vegetarian option)
  • 4 triangles of The Laughing Cow Light with Blue Cheese
  • 1/2 lemon zest
  • Few sprigs of thyme
  • 1 1/2 tsp of dried breadcrumbs
  • Salt and pepper
  • Few sprigs of thyme

Method

  1. Start by placing a griddle pan on heat on the hob.
  2. Cut each cauliflower floret lengthways in to 5mm thick slices and place each slice on the griddle
  3. Allow to cook for 2 to 3 minutes on each side
  4. Remove from the heat and season with a little salt and pepper.
  5. Place the pancetta on the griddle pan and cook each slice for 2 minutes. Remove from the pan when they are golden and crispy.
  6. Slice the pancetta in half and place a piece on each griddled cauliflower.
  7. Top each floret with a spread of The Laughing Cow Light with Blue Cheese and arrange on a serving plate.
  8. Scatter the plate with lemon zest, thyme and breadcrumbs and serve deliciously warm.
