Creamy Avocado-Tomato Bruschetta

Ingredients
For 3 persons:
- 1 baguette or ciabatta
- 6 wedges of The Laughing Cow Light
- 2 tomatoes
- 2 avocados
- 1 lemon
- extra virgin olive oil
- garlic
Method
- Crostini:
- Preheat your oven to 190°C
- Slice a baguette or a ciabatta into 1/4 inch thick slices
- Mix extra virgin olive oil and chopped garlic in a bowl
- Brush slices with the olive oil & garlic on both sides
- Place on baking sheet and bake for 6-8 minutes
- Let the crostinis cool down (Tip: you can store them in an airtight container up to 3 days at room temperature)
- Topping:
- Dice the avocados and tomatoes in small cubes
- Add 1 wedge of The Laughing Cow Original or Light on each crostini
- Top with a couple of cubes of avocados and tomatoes
- Squeeze some lemon juice on the brushettas and add a bit of fresh herbs
- Enjoy your delicious brushettas!
