Creamy Avocado-Tomato Bruschetta

Revisit this classic Italian appetizer with the deliciously creamy Laughing Cow cheese!

Makes 3



For 3 persons:

  • 1 baguette or ciabatta
  • 6 wedges of The Laughing Cow Light 
  • 2 tomatoes
  • 2 avocados
  • 1 lemon
  • extra virgin olive oil
  • garlic


  1. Crostini: 
  2. Preheat your oven to 190°C
  3. Slice a baguette or a ciabatta into 1/4 inch thick slices
  4. Mix extra virgin olive oil and chopped garlic in a bowl
  5. Brush slices with the olive oil & garlic on both sides
  6. Place on baking sheet and bake for 6-8 minutes
  7. Let the crostinis cool down (Tip: you can store them in an airtight container up to 3 days at room temperature)
  8. Topping:
  9. Dice the avocados and tomatoes in small cubes
  10. Add 1 wedge of The Laughing Cow Original or Light on each crostini
  11. Top with a couple of cubes of avocados and tomatoes
  12. Squeeze some lemon juice on the brushettas and add a bit of fresh herbs
  13.   Enjoy your delicious brushettas!
