Stuffed Strawberries

OMG, are you in for a treat? These stuffed strawberries are my go-to snack when I’m on the go. Filled with a creamy smooth secret mix of my light cheese spread, crushed biscotti and finely chopped almonds, they’re sweet, juicy and luxuriously fruity.  And they take just seconds to create, which is good because I can’t wait to scoff them, no matter the time of day.
These work well for a picnic, a buffet, as a sweet canape and particularly as a snack for watching tennis (because… that’s what people do when they watch Wimbledon right… eat Strawberries?). Just make sure if you’re sharing them that you make a whole bunch!

Preparation time: 5 minutes

Makes 10


  • 10 plump strawberries
  • 5 triangles of The Laughing Cow Light
  • 3 crushed biscotti biscuits
  • 1 tablespoon sliced almonds, chopped
  • 1 teaspoon icing sugar


  1. Slice the tops off the strawberries and spread each with half a triangle of The Laughing Cow Light.
  2. In a small dish mix together the biscotti, nuts and icing sugar.
  3. Take each strawberry and dip the cheese topping into the crumb mixture, rolling it around so that each one is generously covered.
  4. Set on an attractive dish and enjoy!
