Rich tasting mince, fluffy mashed potato and smooth cheese on top – who could possibly resist?
Preheat the oven to 180°C/350°F/Gas 4.
Bring a saucepan of water to the boil and boil the potatoes for 10 minutes.
Meanwhile dry fry the onion for 3 minutes and then stir in the mince. Brown the mince and strain off all excess fat.
Add to the pan the chopped tomatoes, Worcestershire sauce, stock cube and frozen vegetables. Season to taste and simmer for 20 minutes.
Transfer the mixture to an ovenproof dish. Layer the potatoes over the mince with The Laughing Cow Light triangles and bake for 20 minutes.
Tip: Give it a lift! For added flavour and extra veg, clean and cut 2 medium leeks in half, slice and sprinkle on top of the mashed potatoes.
