Asparagus and Bacon salad

A crisp, hearty salad.

Method

Preheat the grill, and grill the bacon rashers until crispy.

Bring a large saucepan of water to the boil. Plunge the asparagus into the water and cook for 2 minutes. Drain and run under cold water. Pat dry with kitchen paper.

Cut The Laughing Cow Light triangles and place in a bowl. Drizzle with the fat free dressing.

Toss the bacon, lettuce leaves, rocket and cherry tomatoes together.

Arrange between two plates The Laughing Cow Light pieces, asparagus and radishes.

Serve with brown bread.

Tip: For a fruity edge, add a few halved red grapes to the salad before serving

2 tbsp fat free dressing or vinaigrette
2 rashers of lean bacon
Crest lettuce leaves
Rocket lettuce leaves
112g cherry tomatoes, halved
112g radishes, washed and trimmed
